Delicious and healthy Homemade Graham Crackers made with white spelt flour, natural sweeteners, butter, and non-fat milk for a wholesome and flavorful treat. Perfect for snacking or as a base for your favorite pies and desserts!

Ingredients

  • 270g (2¼ cups) White Spelt Flour (divided)

  • 48g (¼ cup) Sugar

  • 1 tsp Ground Cinnamon

  • ½ tsp Baking Soda

  • ¼ tsp Salt

  • 42g (2 tbs) Pure Maple Syrup

  • 42g (2 tbs) Molasses

  • 30g (2 tbs) Unsweetened Applesauce

  • 28g (2 tbs) Butter, melted and slightly cooled

  • 1 tbs Non-Fat Milk

  • 1 tsp Vanilla Extract

Instructions

  1. Prepare Baking Sheets:
    Line 2 cookie sheets with parchment paper and place a large Silpat or clean surface on your counter for rolling the dough.

  2. Set Aside Flour:
    In a small bowl, set aside ¾ cup of the white spelt flour.

  3. Mix Dry Ingredients:
    In a medium-sized mixing bowl, whisk together the remaining 1½ cups of white spelt flour, sugar, cinnamon, baking soda, and salt.

  4. Combine Wet Ingredients:
    In a large bowl, whisk together the maple syrup, molasses, applesauce, melted butter, non-fat milk, and vanilla extract until smooth.

  5. Combine Wet and Dry:
    Gradually add the dry ingredients to the wet mixture. Fold together until a dough forms.

  6. Knead the Dough:
    Dust the Silpat (or counter) with the reserved ¾ cup of white spelt flour. Knead the dough gently until it comes together into a smooth ball. Let the dough rest for 10 minutes.

  7. Roll and Cut:
    Preheat the oven to 350°F (175°C). Roll the dough out to approximately ⅛" thickness. Use a pizza cutter to slice the dough into cracker-sized squares. Carefully transfer each square to the prepared baking sheets using a spatula.

  8. Dock and Bake:
    Dock the dough (poke small holes) with a fork to prevent puffing. Bake for 14-16 minutes, or until the edges of the crackers are lightly browned.

  9. Cool Completely:
    Slide the parchment paper with the crackers onto a wire cooling rack. Let them cool completely before serving or storing.
